…are sometimes awesome… since we had a dinner party last night there was a lot to choose from today. I decided on curried quinoa greens with coconut dressing, Thai-spice mango and shrimp, and my mom’s funky summer salsa :)
The quinoa and shrimp dish are two of my absolute favorites and they’re from the book The Healthiest Meals on Earth, which I highly recommend for some easy to create healthy meals!
