Dinner last night: I cooked for myself last night and pretty much used the only stuff I had on hand.  Ended up with a dish I love from a restuarant and bar I love called Kite & Key.  Asapragus with fried egg and shaved parmesan cheese.
Ingredients:
1 bunch fresh asparagus
1-2 eggs (I used 2 since this was a dinner)
shaved parmesan
1 tbsp olive oil
squeeze of lemon
ground pepper
drizzle of balsamic vinegar
I cooked the asapargus in olive oil over high heat for about 5 minutes with a lid over top to keep all the steam in- this produced a nice tender result.  I immediately sprinkled the shaved parmesan over the asparagus once it was done cooking and covered it to keep it as warm as possible while the eggs cooked.
Using the leftover oil I fried the eggs.  
Seasoned the asparagus with lemon and balsamic then laid the eggs over top.  So delicious.
