Oh man, I didn’t even get a chance to mention dad’s birthday dinner last night. It was delicious. Pretty sure I’ve never brought this up here before, but my mom graduated from the Culinary Institute of America back in the 1970s, so she’s pretty much a baller when it comes to cooking.
ANYWAY, our meal last night: chicken marinated in dijon, soy, teriyaki and a bunch of other stuff I don’t remember, rissoto with fresh peas, roasted carrots, and pineapple relish.
It was all incredibly delicious- the chicken was purchased right up in town at the West Chester Growers Market yesterday morning and was probably the best I’ve had in years. YEARS! For dessert we had blueberry pie… tonight I believe they’ll be having a sour cherry pie for father’s day.
Fortunately I’m heading up to Vermont today for the next month, so my hips will be saved from the impending parade of calories.
